- For the Pineapple Sorbet
1/2 Cup Sugar
1/4 Cup Pineapple Juice
2 tsps Lemon Juice
Directions
- For the Pineapple Sorbet
- Strain the juice from the pineapple chunks. Set the juice aside for later. Pour the pineapple chunks into a gallon ziplock bag. Place the pineapple in the freezer for 4 hours until frozen.
- Add the frozen pineapple chunks to a food processor and pulse until they’re finely grated.
- In a bowl combine the sugar, pineapple juice, and lemon juice. Mix together.
- Add the sugar mixture in with the grated pineapples.
- Purée the pineapple for 30 seconds. Then turn the food processor off, and use a spatula to press any pineapple that’s up on the edge, down in with the rest of the pineapple. Purée the pineapple until smooth.
- Once smooth transfer the pineapple sorbet into a container. From there, you can either place the pineapple sorbet in the freezer and freeze for a few hours, or you can just eat it right away.
