Ingredients
1 Cup Glazed Pecans
6 Tbsps Flour
1/4 Cup Melted Butter
1/2 tsp Baking Soda
Vanilla Ice Cream
Directions
- Preheat the oven to 375 degrees Fahrenheit.
- Add the glazed pecans and flour to a food processor and pulse until mixture reaches the consistency of flour.
- Pour the flour mixture into a mixing bowl. Add in the melted butter and stir the ingredients until they stick together like dough.
- Roll the dough into balls, about the size of a quarter. You should have about 11 cookie dough balls.
- Put the cookie dough balls onto a cookie sheet and bake them for 5 minutes. Take them out of the oven, and use a fork to press down on each cookie, creating a cross hatch on the top.
- Bake the cookies for another 9 minutes. Then take the cookies out of the oven and let them cool completely.
- Once cooled, take a scoop of vanilla ice cram and place it on one cookie and then place another cookie on top to create your ice cream sandwiches.
