Lemon Bar Ice Cream in a Jar

- For the Ice Cream
2 Lemon Bars
1 Cup Heavy Whipping Cream
1/4 Cup Sugar
1/2 tsp Vanilla Extract
Directions
- Follow the instructions on a box of lemon bar mix (or make them from scratch) to make your lemon bars. I like using Krusteaz Lemon Bar mix.
- Add the heavy whipping cream, sugar and vanilla extract to a mason jar. Put the lid on and shake it for about 10 seconds.
- Chop up the lemon bars into small squares then add those to the mason jar. Put the lid back on the jar and shake it for another 20 seconds.
- Pour the ice cream mixture into a freezer safe container. Place the ice cream mixture in the freezer for 5 hours or until it’s completely frozen. About halfway through the freezing process, stir the ice cream once, to mix the lemon bars into the ice cream so they don’t settle to the bottom. Then let the ice cream freeze the remaining amount of the time.
- Once frozen, scoop and enjoy! If needed, you can let the ice cream sit on the counter for about 5 minutes, before scooping, to let it soften.
