Rich, fudgy, chocolate brownies, with just a touch of peppermint and toasty Oreos.

Ingredients

  • For the Brownies
  • 1 1/2 Cups Chocolate Chips

  • 3/4 Cup Butter Melted

  • 1 Cup Sugar

  • 1/2 tsp Vanilla Extract

  • 2 Eggs

  • 1/2 Cup Cocoa Powder

  • 1/2 Cup Bob’s Red Mill Gluten Free 1 to 1 Baking Flour

  • 1/2 tsp Baking Soda

  • 1/2 tsp Salt

  • 10 Candy Cane Hershey Kisses, chopped

  • 10 Gluten-Free Oreos

  • For the Sundae
  • Vanilla Ice Cream

  • Chocolate Sauce

  • Crushed Candy Canes

Directions

  • For the Brownies
  • Preheat the oven to 425 degrees Fahrenheit.
  • To a microwave safe bowl, add the chocolate chips and melted butter. Use a spoon to stir the chocolate in with the butter, until it begins to melt. If needed, microwave the chocolate butter mixture, for 20-30 seconds to help it melt completely. Stir until smooth.
  • Once smooth add in the sugar, vanilla extract, and eggs. Stir until combined.
  • In a separate bowl, whisk together the cocoa powder, flour, baking soda, and salt.
  • Sift the dry ingredients into the wet ingredients and stir until combined.
  • Line a 7×11″ baking pan with parchment paper, and transfer the brownie batter to the pan.
  • Sprinkle the crushed candy canes over the top of the batter and swirl them in.
  • Chop up the candy cane kisses, sprinkle those over the top of the batter, and press them into the batter.
  • Break the Gluten-free Oreos in half and press them into the top of the brownie batter.
  • Bake the brownies for 25-30 minutes, or until a toothpick can be inserted into the middle and comes out clean.
  • Once baked, remove the brownies from the oven and let cool.
  • For the Sundae
  • Add a brownie to a plate. Place a scoop of ice cream on top of your brownie.
  • Drizzle chocolate sauce on top of the ice cream and sprinkle crushed candy canes on top.
  • Enjoy!
