Coffee Ice Cream in a Jar

- For the Coffee Ice Cream
1 tsp Hot Water
1 tsp Instant Coffee (I use Starbucks VIA)
1 Cup Heavy Whipping Cream
1/4 Cup Sugar
1/2 tsp Vanilla Extract
Directions
- Add the instant coffee and hot water to a mason jar. Use a spoon to stir the coffee and help it dissolve.
- Add the heavy whipping cream, sugar, and vanilla to the mason jar. Put the lid on the jar and shake it for 30 seconds until combined.
- Remove the lid from the jar and place the ice cream in the freezer for at least 5 hours, or until the ice cream is completely frozen.
- Once the ice cream is frozen, scoop and enjoy!
Can erythritol be used to replace the sugar?
You know, I haven’t tried erythritol before in ice cream. I’ve used splenda, and that works, but it does make the ice cream freeze a bit harder.
