Chocolate Covered Strawberry Ice Cream, in a jar. Vibrantly pink and refreshing strawberry ice cream with chunks of milk chocolate mixed throughout. This ice cream is magically whimsical, and tastes just like a chocolate covered strawberry, but in ice cream form.

Ingredients

- For the Strawberry Ice Cream
1 Cup Heavy Whipping Cream
5 Tbsps Sugar
1 1/2 Cups Frozen Strawberries
3 drops Pink Food Coloring
- For the Strawberry Chunks
2 Frozen Strawberries
1 Tbsp Sugar
- For the Chocolate
1/4 Cup Milk Chocolate Chips
2 Tbsps Heavy Whipping Cream
Directions
- For the Strawberry Ice Cream
- Add the frozen strawberries to a microwave safe bowl. Defrost the strawberries in the microwave for about a minute until soft.
- Add the strawberries, sugar, heavy whipping, and food coloring to the blender. Blend until the mixture is smooth and there are no chunks of strawberries.
- Pour the strawberry ice cream mixture into a plastic container.
- For the Strawberry Chunks
- Add the two frozen strawberries to a microwave safe bowl, microwave them for about 30 seconds, to lightly soften them.
- Once softened, use a knife to finely dice them into squares. Toss them with the tablespoon of sugar.
- Sprinkle the sugar coated strawberries around the ice cream. Use a spoon to swirl them in, and to separate any large chunks.
- For the Chocolate
- Add the chocolate chips and heavy whipping cream to a microwave safe bowl. Microwave the chocolate for 30 seconds until melted. Use a spoon to stir the chocolate in with the heavy whipping cream until it’s smooth.
- Add about drops of the chocolate mixture to the strawberry ice cream mixture. Use a fork or spoon to submerge the chocolate into the strawberry ice cream. Add the remaining drops of chocolate into the strawberry ice cream mixture, but let don’t submerge them, let the chocolate sit on the top.
- Place the ice cream into the freezer and let freeze for 4 hours or until completely frozen.
- Once frozen, scoop and enjoy!
